This was dinner tonight.  Well that salad is not mine.  That was Amy’s salad.  Mine didn’t have tomatoes but had raw sunflower seeds.  On the list tonight was herb salads.  The main course was tempeh that had been flash fried on both sides to make it warm and crispy on the outside.  The tempeh was smoothered in Fukume-NI which is shiitake mushrooms cooked in shoyu (japanes soy sauce), powdered suger and sesame oil.  That happens to be my favorite way to eat shiitakes.  The other dish was sunchokes (aka Jeresaulem Artichokes) cooked like Nasu-Miso.  Nasu-Miso uses egg plant BUT we boiled the sunchokes then flashed fried them then added the two stage sauce.  The first stage is dried red chillies, sake (I was out so I used vodka worked out almost the same), mirin, powdered sugar, and shoyu.  You cook it in that sauce for 2 - 3 minutes then add the second sauce which is red miso (or darker if you would like) the miso you make a wet paste out of with water throw that in and let cook for a few minutes then serve.  The meal was very satisfying!
